Can I use just the recording chain in bx_rockrack v3 without using one of the amp models?

No, unfortunately, there is no way to turn off the amp modeling since the recording chains used for the amp/cab simulations are intertwined with the emulation modeling on the backend.

Therefore, the plugin is not able to generate only the signal from those recording chains without using one of the modeled amp heads.
